@turbohawk to disable planes crashing, you basically have to disable certain planes cuz the AI doesn't know how to fly them. If you go to your /scripts folder and open LivelyWorld.xml, scroll about halfway down till you see the "Air&Land Military Vehicles" section. Wherever you see a line with "terrain=air", just change the "frecuency" and "probability" numbers to whatever you want.
I would start with finding the titan first (scroll down a little more), and changing both "frecuency" and "probability" to zero. Then save your changes and see if it works.
As to add-on cars, make sure you have the "Add-on spawner" mod, as well as "Trainer V". Those are essentials if you want to see DLC cars etc in traffic. There are also other traffic mods that come with files you can edit what cars spawn, and even add more. If you're just seeing the same car everywhere, there's also a fix of changing ped and traffic variety in settings.xml but is a little more involved (I think instructions are included in World of Variety)
